İngredients
For doner;
500 gr. Lamb meat
2 tablespoons of sunflower oil
2 tablespoons of butter
1 teaspoon of salt
1 teaspoon of thyme
1 teaspoon of black pepper
1 small onion
For the pita;
4 glasses of flour
10 grams of dry yeast
1 glass of warm water
1 teaspoon of salt
For the sauce;
1 tablespoon of sunflower oil
1 tablespoon of butter
1 tablespoon tomato paste
1 tablespoon of pepper paste
1 cup of grated tomatoes
1 glass of hot water
1/2 teaspoon of paprika
1 teaspoon of salt
For topping:
Garlic yogurt
2 tablespoons of butter
HOW TO MAKE
Doner preparation;
Grate the onion in a bowl. Add all the spices except salt. After the
mixture is well mixed, dipp thinned lamb meats in to the mixture. Cover the top
of the bowl and keep the meats in the refrigerator overnight. The next day, stack
the meats on a stretch film and wrap it tightly. Keep the wrapped meat in the
deep freezer until it hardens. This may take a few hours to a day depending on
time you have. When you want to cook the meat, take it out of the freezer half
an hour before you start. Cut into thin slices with a sharp knife. Cook the
meat in a hot, non-stick pan. (However, adding a small amount of oil to the pan
and not cooking too long will prevent damage to the ceramic-based or other non-stick
surface pan.) Add salt.
Pita preparation;
Put half of the flour into a bowl. Add yeast, salt, warm water and start to
knead. Keep adding flour, until the dough does not stick to your hand. Place the
dough on a floured surface and knead until it becomes mellow. Divide it into
three or four pieces according to the desired size of pita. Give it a round
shape. Ferment it for an hour by covering it with a clean cloth. At the end of
an hour, shape the pitas using your fingertips. Bake it in a preheated oven at
200 degrees for ten to twelve minutes, until it gets golden brown.
Sauce preparation:
Put
two tablespoons of butter in a pan and melt it. Add tomato paste and cook until
the smell of tomato paste emerges. Then add a glass of water and a glass of grated
tomato (optionally), salt and chili pepper. Stir it and let it boil for a few
minutes.
Serving:
First,
cut the pitas into bite sizes and place them on the plate, Then drizzle the
sauce on it and cover pitas with döner. Put some yogurt on one side of the
plate. Put the sauce on the meat and pour melted butter. If you wold like to,
you can decorate with tomatoes and peppers.
